Bandit's Chicken Dinner

I bake 2 4-packs of Chicken Leg Quarters in a roasting pan sprayed with pam and add about 1/2 inch of water. I take most of the skin off the chicken and sprinkle the whole pan of chicken with garlic powder and cook for about 1 1/2 hours at 350.

I store the cooked chicken in the fridge whole and serve my poochie 1 cup of this twice a day along with about 1/2 cup of microwaved (cooled) sweet potato mashed up with 1/2 cup of pureed pintos or black beans and a couple of tablespoons of olive oil all mixed up.

I microwave 5 or 6 sweet potatos once a week and cook up 2lbs of dry beans once a week. I puree the beans in the blender and store in the fridge. Then all I have to do is take out these 3 ingredients, mix it up, and serve. My dog is always happy to see me!

Bandit is a 2 1/2 year old Springer Spaniel with skin allergies and food allergies. We have tried all kinds of dry dog food and nothing helps. He is allergic to beef. If I am out of chicken I use ground turkey. He loves to be in the kitchen and recognizes the smells of his food being cooked. I also started making his dog treats, too.
